Kaiseki

Had a two-day trial in a well-known Japanese restaurant here specializing in kaiseki. Unfortunately, I left the details of the dishes at home (I am in Japan right now!) but check out the pix.

Sakizuke (starter). This was made of a type of seaweed.

Takiawase (slow-cooked dish). I'm bummed I didn't take a picture of this when it was full of the fish broth. You can get an idea though. Veggies include daikon, potatoes, carrots, yellow peppers, broccoli rabe, baby fern tip, and sansho pepper leaf (in Chinese - sichuan pepper leaf).

Chef added the little pink, green, and white rice cake bits in honor of the rice cake season (symbolizing humanity) that has started in Japan.

Simple yet delicious pound cake. Sweet sticky rice filled with red bean.

And of course, real wasabi root. (Amir was bugging me to find out if they used real wasabi and how they prepared it - with a shark skin). The taste is really that of wasabi minus the strong, burning sensation through the nose you normally get with the paste.

I forgot to take a photo of the grilled trout dish. I was in charge of the slow-cooked dish as well as helped out with the grilled dish. It was only me and the chef on hot foods, two other guys on cold. Tiny kitchen, but extremely nice environment. Probably one of the nicest I have worked in. This was the first time I have been exposed to kaiseki (less formal version). I was lucky to have been able to taste everything. Good stuff. I can't wait to eat kaiseki in Hakone!

Ubuntu (the restaurant!) ... at last

It's about time I made it out to Ubuntu. It was surprisingly very casual. Very friendly and relaxed atmosphere. Prices aren't through the roof (except for some of the wines.)

Lucky for us, there was enough of us to order the whole menu. Yep, the whole menu (minus 1 pizza, plus another cauliflower pot). The pictures speak for themselves...

Bites:

Marcona almonds

I personally loved the almonds although others found it had a bit too much lavender. Olives were awesome !

This was one of the less popular dishes amongst us. I wasn't a big fan of the texture. (Taste was there.)

I have never been a huge fan of grits, but this was something unique. The taste of smoked hickory, the brussel sprouts, everything was a great combo.

LOVED IT! Andrew and I were crazy about the pizza. Why? The crust perhaps, the whole combination? Who cares, it was good!

The famous cauliflower in a cast iron pot! Don't let the small size fool you - I found it to be quite rich. 1 or 2 bites of this was enough for me. Especially after the many courses we've already had. Delicious and I loved the variety of cooking/textures involved.

I love cheesecake. Especially cheesecake that is rich... but not TOO rich and dense. This was perfection. I could eat up the whole thing (ok... had I not tasted the entire menu previous to this). I LOVED it. No doubt why it is a signature dessert.

I find that however tasty desserts can be at nice restaurants or Michelin restaurants, I seldom remember them. But this is one of those desserts that stands out. A dessert to remember. Cilantro was a fabulous pairing with the rest of the dessert.

So it's a mini cupcake. A mini carrot cupcake. A PERFECT mini carrot cupcake. AND IT'S VEGAN! HOW??? WHY??? I don't get how it can be so tasty and moist. And that cream cheese frosting? Made from TOFU! I'm so confused. But happy. I wanted to buy a couple for Raf but they were all out. I guess we will have to come back here for this... and the cheesecake... and the pizza... and beets... artichokes, soup, etc etc etc.

Ubuntu has definitely lived up to all the hype. Everything was executed extremely well. As a carnivore who is a bit skeptical of restaurants that don't serve meat, I left completely stuffed and completely satisfied. Perhaps because Chef Jeremy is not a vegetarian, he has figured out how to satiate the carnivore in us. I can't wait to go back. Next time, I will do yoga before hand.

Shaking "lamb" (Vietnamese style - came up with this at lunch when I was eating shaking beef with Diana) with oyster mushrooms cooked in lamb sauce.
Marinade: soy sauce, galanga, garlic, lemongrass, sugar, fish sauce

Mystery ingredient use: Lamb shoulder. Oyster mushrooms.

Everything turned out pretty tasty, and everyone was pretty satisfied. The sanma fish, shaking lamb, tapioca, and cookies were definitely hits. Long meal. Too many dishes (to wash). Back hurts. The End.
