Our last wine class

This morning was our last wine class. We had a test at 8am - quite simple. I made some silly mistakes but I think I did okay. Then we had our last wine tasting for the region Bearn. Usually we taste wine and eat cheese in the restaurant, but today we brought it to the kitchen.

I hadn't eaten any breakfast this morning, so the first thing to hit my stomach was wine. Usually I go super easy on the tasting, but I figured it was the last class - the lightweight might as well have a couple glasses! Ummm, gotta love culinary school. Required drinking!

Here is Madame Agnès Brugière on the left, originally from Toulouse, and Stephanie Curtis, American in Paris for the past 15 years - she is in charge of all the Anglo groups and helped us get situated in Paris. They are both really really nice and helpful. Agnès is so knowlegdable and passionate about wine.

French brunch... and more Indian food

Nina and Christophe invited Andrew and I to brunch today. And we gladly accepted. We thought we were going out to eat, but Nina and Christophe ended up preparing this huge meal for all of us. It was fantastic! We had so many little plates - confit de tomates, confit de poivrons, sausage, sardines, roasted chicken, potatoes, salad, fresh fruits, bread, wine, tea, juice, coffee, etc. They also bought a bunch of croissants and pain au chocolate. And I really believe that the pain au chocolat they bought were the best I have had in Paris thus far. It was from a little bakery close to where they live in the 10th (Indian town). Impressive setup for brunch. Our tummies were quite happy.

Those boys can eat. They all finished off the bowl of croissants and pain au chocolat. But Merlin - I swear he ate like 4 or 5 of them AFTER we finished eating, and he slathered nutella all over the croissants. HAHAHA. Oh and apparently, he likes to mix bananas, nutella and ham or steak together? Never heard that one before !

After filling up our bellies, we took a walk around Canal St. Martin - they close a section of the street on Sundays so that people can walk around. We wanted to sit and get coffee but it was an unusually packed day today. Merlin had to go back home to Toulouse, so we went back to the Canal and grabbed a couple cokes and beers, and sat around to chill and chit chat.

Ah to enjoy life in France. Eat, drink, and be merry. =D We headed home after a bit since me and Nina needed to do some homework. Christophe ended up helping me with my CAP papers for history and geography. It turned out to take a LOT longer than expected. But I am sure he learned a lot. HAH! In the meantime, Andrew was playing video games with Sorel.

It was SO hilarious because we could hear him from the kitchen yelling about the game. Mr. Competitive comes out when the video games begin ! I walked in to check out what they were doing and I hear Andrew talking shit to Sorel in French saying, "so who has 6 points? Who's winning here?" Oh man, Andrew ! You are hilarious. They played games for as long as we were editing my papers. Andrew was quite exhausted afterwards. hahahahah. We didn't end up leaving until around 930pm ! We had every intention of going home right away, but we were walking by all these Indian restaurants so we decided to check one out for dinner. And we were just so hungry.

We asked them to make our food really spicy. I couldn't taste any heat but Andrew said he did. Flavor was really good, and the chicken was nice and tender.

This is like a type of Indian cornmeal dessert soaked in syrup. A bit too sweet and too heavy for me so I could only eat two bites.

Overall, we were both pretty happy with the meal. It was only 9,50 for 3-course prix fixe. Not bad. Pretty filling and satisfying too.

Crêperie de Josselin

Tonight Andrew and I met up with Nina, Christophe, French friends whom I met through Timo, their daughter Sorel, and their friend Merlin at Crêperie de Josselin, un restaurant Bretagne (for those who didn't know, crêpes come from Brittany in the northwest of France). It was really crowded here which is a good sign. I always wanted to eat at a sit down crêperie but wasn't sure which ones were good. This restaurant was excellent. The savory crêpes are made with sarrasin, or buckwheat. I ordered a savory crêpe with bacon, goat cheese, spinach, and eggs. It was absolutely delicious. We ordered a couple pitchers of cider as well. Delicious. Us girls couldn't finish our crêpes, so the boys helped us. hah!

For the dessert crepe, Andrew and I split a salted caramel crêpe with vanilla ice-cream inside. They are known here for their salted caramel in sauce form, and ice-cream. Sorel ordered the ice-cream. Both were very, very good. The ice-cream wasn't too sweet or overpowering either. The crêpes are around 6 - 7 Euro each. Very very highly recommended.

Afterwards, we met up with Andrew's friend Tristan in the 6th at The Moose, a Canadian bar that we used to frequent back when I lived off rue du Four. We had a chill night with some drinks. A bunch of American girls ended up coming by who were friends of a friend of Tristan. One of the girls was actually from my hometown in California and went to my high school. Small world ! We had a couple of the same teachers, but she was quite a bit younger than me. Damn, I am getting old ! JK. Nina, Christophe, Merlin and I called it a night around 1H30.

Berthillon ! The best ice-cream

Amanda and I had a craving for ice-cream the past week so we stopped by Berthillon. A really popular ice-cream joint in Paris. It was a gorgeous day out so it was nice to walk on the Ile Saint Louis, where it is located. I had the chocolate and pistachio (about 3 Euro), and Amanda had apple and salted caramel. Oh my god, this is probably the best ice-cream I have ever had. It really felt like I was eating a deliciously creamy dark chocolate bar, and the pistachio flavor was made with real pistachios - it didn't have that neon green color and taste to it. You know what I am talking about ! It was SO SO GOOD. Very rich so get some water with your ice-cream. Ummmmm.

Practical final is over !

What a day. Yesterday, l'economat accidentally gave us part of our mise en place for today's final. So I knew we had a Tarte aux Pommes. It turned out to be Tarte aux Pommes à l'ancienne which is almost the same, except with a custard instead of an apple puree.

The other half of the class got to do a Quiche Lorraine and Carré d'Agneau aux primeurs (quite a few turned vegetables). I was convinced that we would get some kind of carré (rib rack) of lamb or pork. Turned out that our main dish was to be Filets de Sole Bonne-Femme. I didn't look at any of our previous fish dishes. But it was fine because this recipe was really easy. It simply entailed

- fileting two soles
- making a fish stock
- preparing the garniture (shallots and mushrooms)
- cooking the filet in white wine and stock
- reducing stock and adding crème fraîche.
- reduce and reduce.
- "Napper" the fish with the sauce and throw it under the salamander in order to gratiner but without having the sauce break.

Overall, I think I did fine except for few things. For my tarte, I didn't let the dough rest long enough so when I "foncered" the edges, it didn't hold up too well. Well, I suck at foncering so I didn't expect the crusts on my tarte to look spectacular.

Next thing is that I underestimated the time to reduce my sauce. I thought 15 minutes would be sufficient. Ughhh, it was way too watery. At least it tasted good. Oh, and I did put mine in the salamander but apparently the judges said/thought I didn't. Oh and I strained out the garniture instead of placing it under the fish. ARghhh ! Oh well, not a complete disaster. I just really wish my sauce was thicker. Tant pis !

It's over, and I feel good. =)

Pintade en Chartreuse

Today I got to work with chef on this recipe. This recipe included layers of cabbage "milan," saucisse de morteau, pintade (guinea fowl), and poitrine de porc. I prepped the stocks and pintade, and he did the veg and farce. We both did the chopping. It was a fun and relaxing day today. The taste and texture of pintade is similar to chicken but also has a distinct flavor.

Ok, so I didn't measure the carrots and navet exactly... but it turned out decent. And it held it's shape!

It had a really nice, smoky flavor to it because of the sausage, but also salty and savory from the poitrine de porc. The cabbage and pintade balanced out all the strong flavors. Very delicious. I gave half of mine away to my neighbors.

Written final exam

Oh how I wish I could take both practical and written exam today. Then I would be finished! And then I could focus on the CAP. Sigh. We have class tomorrow, then the practical for the other half of the class. Too bad finals week isn't like in the US. A week with just exams and free time to study more.

Oh, and the written exam was surprisingly really easy.

Au Sommet de L'Himalaya

It's time for Indian food ! Amanda and Andrew came over to study for the final. None of us had dinner and had a huge craving for Indian food. We went on Alloresto.com to have it delivered. The French are learning more about takeout! Awesome. It took them two hours (surprise), but we did end up getting some decent Indian food. French people don't care for spicy food so cuisines that are typically spicy, are not in Paris. I left a note online saying that we are American so please make it more spicy. For me, I felt no heat so I loaded up on the cayenne. It wasn't the same but at least I got a bit of spice. The flavors were definately there though.

And we called the French police

An interesting day today. Amanda stopped by to study for the final. She was sitting near the windows in the kitchen area, and I was in the bathroom checking voicemail and grabbing some laundry. Around 14:15, all of a sudden we heard some shuffling and screaming. Like bloodcurdling screaming. Out of a murder movie screaming. It was just not normal. Then we heard a bunch of glasses breaking on the floor, choking (Amanda heard this since she was near the window), and complete silence. Complete eerie silence. We were both shocked. Amanda was sitting near the open window so she could hear everything better than I. I thought it came from the building across from me, but she thought it was my neighbors. There isn't anyone living in the apartment next to me. We were so freaked out that we didn't know what to do. And I was wondering, I am the only person home on a Sunday. Did no one else hear that freakish screaming?! It took us 20 minutes to finally decide to call the cops.

I explained to the lady on the phone that I heard a woman screaming, broken glass, and her choking. She got my # down and had some cops call me back within a minute. Afterwards, they showed up within 10 minutes. Really fast. I tried explaining it again in my choppy French. It was quite difficult but I kept telling them that it wasn't normal. We were all not sure which building it was. They knocked on my neighbors door but no one was there. And apparently, no one lives there so it had to be the other building. One of the cops was speaking really fast - I really didn't understand what he said. After they got my info, they left. We were both pretty freaked out the rest of the afternoon. I closed my shades the rest of the day.

Luckily, Amanda stuck around for awhile until she had to go to church. When she left, she immediately came back up to my floor and told me to go downstairs with her. There were at least six large vans full of armed cops outside my building. We were convinced it was for another protest or demonstration. I mean seriously. It couldn't be for the scary disturbance earlier. So I brushed it off.

Later that evening, Andrew stopped by to study. I asked him if the cops were still there. And they still were. We left an hour later to try and grab some snacks and they were still out there. They've been there for at least 5 hours and no demonstration. It was just so odd. What a disturbing afternoon... ughhhhhh

Toots & Matt - the Backpackers

Today was Matt and Toots last day. I wish they could have stayed longer. It was nice having friends from back home visiting. For lunch, we ate at Eric Kayser which was nice. I bought them a couple financiers from there which Toots happily ate most of it herself. =D I think it would be dangerous if Toots lived in Paris same time as me. Omg, we would just eat all day every day. lol. After lunch, we walked to Jardin des Tuileries. Then back home for some final packing.

I went with them to the train station - they arrived about 7 minutes before their train was supposed to leave. They were supposed to come 30 minutes before - oops! But they were able to get onto the next one to London.

Later that night, Toots and Matt treated me to a delicious Tibetan dinner at Kokonor. First time for all of us. I am no connoisseure on Tibetan food but I really enjoyed it. We ordered a salad (nothing special), and these vegetarian samosa type things with an excellent sauce. These were really good. Who knew vegetarian food could be good? We also ordered beef curry which was different from your typical curry. It was more like a stew with a touch of curry, but non-spicy. Extremely tender. Very good. They mixed up our order and gave us a pork stir-fry. It tasted very Chinese. Originally we ordered fish. Since we came in at 11pm, 30 minutes before closing, we decided not to change it. For dessert, we got some ice-cream, as well as a rice pudding. I love rice pudding and really enjoyed it here.

The owner was dining with some friends a few tables down. He was speaking Mandarin so when I left, I told him "thank you" in Chinese. He was quite happy to speak to a Chinese person. We chatted for a bit and he told me where he was from, and that his chef was from Shanghai. My Mandarin is more than rusty (think 4 year old level) so I ended up speaking a mix of Mandarin and French which probably sounded quite funny. I also mentioned that I moved here to learn French cuisine. His friend was like "OH C'EST BIEN, C'EST BIEN!" Hahha, it was cute! Anyway, I want to come back another time and try some different things. Thanks Matt + Toots !

And after, we took a cab to Pigalle and hung out at an Irish bar that me and my school friends often hang out at. It was an interesting experience. One of the bouncers there was a total douche bag. Matt bought this crappy pastry covered in powdered sugar. He wrapped it in paper and put it on the table in the bar. Toots was moving it and it accidentally spilled powdered sugar all on the table. So you can imagine what it looked like. The douche bag came by and asked us what it was. lol. We tried to clean it up, but he came by with a sponge. Then he started telling me in a really condescending tone where the trashcan was. I'm like "Oui, JE SAIS !" x 10. Then he says the same thing to Toots. I told him she doesn't speak French, and he kept telling her to throw it away MAINTENANT (now). F'in douche. We just sat there for a bit. We would have left but Matt had already gotten drinks. Afterwards, Toots left the wrapped pastry on the table and we got out of there fast. HAHAHA

Long story short - there was a really drunk American guy that got kicked out but kept coming back in. When we walked out, the bouncer pushed the drunk dood onto a CAR. And right in front of me - I totally could have gotten smashed. The drunk dood came back (not to fight), and the bouncer hit him in the face a couple times. And later, he picked up a wicker bench and hit him on top of the head with it ! F'in crazy. Of course, the drunk guy was an idiot - we have no idea why he kept going back. But still, the bouncer was such a ass for taking cheap shots to a guy who clearly didn't know what he was doing and was not being violent. Ughhh, well we hope the douche found our shitty little pastry on the table.

We wanted to go to a club but it was already around 3AM. We called it a night, went home and had some ramen. Ah, nuttin better than "it's so f'in spicy" ramen in the middle of the night.

This morning, *Ginger and I met up with Carlo, Yuichi, and Brain, for some drinks at Barefoot Coffee Roasters whom really pride themselves in being real baristas and anti-Starbucks.

Something I noticed were the pastries. They had things labeled like "French financiers" and "French pastries" which clearly were nothing close to what they were labeled. Am I weird for being annoyed with that? I mean the financier was a hard, square, brick. And I even told the barista ringing up my hot chocolate what a real financier is. Am I a food snob now? Really, they are desecrating what a financier really is ! Or maybe because I am just so in love with real, French financiers. Sigh. Oh and I have to disagree with Wikipedia on financiers being light. I make them with a lot of butter. And Eric Kayser probably puts 1.5x more butter than I do. I don't think I have had a light financier in Paris... yet... ummm... ok... Anyway, skip the pastries there. The blueberry muffin sucks. Sorry Barefoot - you got the coffee down but you ain't got nothing on Starbucks blueberry coffeecakes and muffins ! And French pastries ! Whatever that is supposed to mean.

For dinner, I ended up cooking a simple and traditional 3-course meal for a couple friends who have immensely helped me out by taking care of Ginger, as well as a couple other friends.

First course was a Velouté Dubarry (cauliflower puree soup) with lots of cayenne - yes, very untraditional. ;) Second course was Striped sea-bass with a beurre blanc, potato purée (cannelled of course), asparagus and cherry tomatoes. Third course, I made my brownie recipe that I had been working on for quite awhile, and crème anglaise. Ah the butter and chocolate are 100000x better in France. I didn't like my brownies here, but the others enjoyed them. =) It was nice to be able to see my family and close friends in such a short period of time.

California Eating Part III

Today, my buddies Yuichi and Carlo took me to eat an American breakfast at Lou's Coffee Shop of pancakes, eggs, and bacon. And of course, watered-down coffee. Ummmmm. Never thought I would appreciate American breakfasts but Paris can do that to you. Also spent some time mingling around downtown Los Gatos, getting some tea, and finally buying a microplane.

After, I went to meet Charles, Phuong, and baby Kyle in San Mateo for Shanghainese food at Little Shanghai. We got chong yuo bing (green onion pancake), xiao loan bao, nian gao (Shanghainese rice cake), nyu rou mien (beef noodles), and tang ren (sesame tapioca in a wine broth). My ping-ying is way off, but anyway it was soooo good. I loved it.

Then I had to meet the family for good old Chinese Muslim food. One of my favorite Chinese cuisines.

There are a few of these restaurants in the Bay Area, but this one is by far one of my favorites. The chef here actually trained the chef at another very popular Chinese Muslim restaurant called Darda. I still prefer the consistency of the noodles at Darda, but everything here was better in terms of flavor and freshness. Fucking delicious.

I have been eating so much that I actually felt sick today after dinner which really isn't all that surprising. Since I don't have much time here, I have been trying to meet up my closest friends as well as spend enough time with the bf and family too. And of course, everyone wants to meet up over food. I wish I was here for longer! It's so good to see everyone.

California Eating Part II

Today Raf and I went to eat at Pluto's for lunch. I ordered my favorite tri-tip salad and garlic fries. So fresh, satisfying, and healthy. And tons of CRISPY vegetables.

For some reason, medium rare to them means well-done. EVERY single time I go to the San Jose branch, I always have to watch them grill my meat. It's pre-seared - they just slice and throw it on the grill so it's rare to begin with. Well the guy cooked one side pretty well. I told him twice that it's done. He said to his colleague in Spanish "It's still red. If she wants it red, then I will give it to her red." ahhahahaha. Of course it's still a bit red! Medium rare! Anyway, I am glad he took it off the grill before it was too late. I don't get this American phenomenon of bien cuit or well-done meat.

Afterwards, I got a pedicure at Lavande Day Spa (gift certificate) in Santana Row which totally sucks so don't go there. Ever. Unless you are a rich housewife that has money to waste for a shitty pedi.

Afterwards, we went to his coworker's place to play with his new baby German Shepherd, Kona. I wish I took pix! She was sooo cute with big old paws. She was bouncing all over the place ! Ah, to have a little baby pup again.

Then for dinner, we ate at TANTO'S- f'in good Japanese tapas. I finally got to order Yaki Onigiri. Wasn't as good as Gochi's but still pretty f'in good.

We tried to get into Gochi (the Japanese chef is actually classically trained in French cuisine) but they were booked solid and somebody didn't call to make reservations when I asked him two weeks ago. But it's ok, Tanto's was good. ;)

Afterwards, we went to some new yogurt place in Cupertino. They have been popping up everywhere - it's the new fad now. Raf just ate a bunch of free samples while Yuichi legitimately bought his own. HAHAHAH. THEN we went to get more balls at Fantasia. Ummmmm. And after to Raf's place to watch the Office and chill. Good to be back and relax with my friends.

I'm home in California for the weekend !

Since we virtually don't have any long vacations in school besides Christmas, for this long 5-day weekend, I decided to go to California. Crazy, huh? It was time to see the family, bf, dog, and friends.

I have pretty much been eating this whole time. Wednesday night, I arrived too late so one of my favorite ramen shops, Ryowa was closed. We hit up In-N-Out instead. HAHA.

Today I spent the afternoon at my parents house playing with my new nephew, eating a delicious home-cooked Chinese lunch, and napping. At night, Raf and I finally went to Ryowa for dinner. I had reservations at Incanto (the chef Chris Consentino, 3rd runner up from 'Who's Going to be the Next Iron Chef') but we were too lazy to drive to the city. We didn't want to waste two hours of our time sitting in the car and $20 for parking, especially with my short time here.

At Ryowa, we ordered the usual - shoyu ramen, the best chicken karaage that I've ever had (it's the sauce and the way it's fried), and the pork fried rice. I typically don't order fried rice often, but it's really good here.

Del Papa again

Today I spent the afternoon studying a bit for finals. Since the weather has miraculously gone from rainy and gloomy to nice and sunny, I went to Jardins des Tuileries to study.

All the tourists have emerged from their caves!

Then joined Amanda, her cousin Chris, Alex, and Julie at Del Papa. Unfortunately, it was an off night because the delicious pasta with gambas didn't taste very fresh this night (same with everyone else's dishes). Oh well! It was still fun.
