La ferme aquacole Saint-Vivien et Winery à Arsac

Here we are at la ferme aquacole Saint-Vivien. This is the shrimp farm.
Photobucket

Everyone was having serious A.D.D. during this visit. We were all playing with the shrubs and plants in the area and secretly putting them in people's hair, jackets, pants, etc.

Bang-me kept messing around with Julie. I was tickling Jessica's neck with plants (I don't even think she realizes that to this day). Canadia was putting shrubs and flowers in my hair.

Classic. Alex, Amanda, and Brian did this to Monsieur Blayac two times. And I think Chef Sébastien might have helped too.
Photobucket

HAAHAHAHHA! The only reason why he found out was because the tour guide told him. It was really hilarious. We were all acting like children.

So I really did try to focus. Look, baby oysters!
Photobucket

And then the allergy attacks started. It was horrible!!! Started with the runny nose, then the sneezing, then the eyes.

By the time I got here, I was in ALLERGY HELL.
Photobucket

And so was everyone else. A few people came swarming to me for drugs. ahhaha. I had a bag full of allergy meds, pepto, vitamins, etc. I always come prepared! A good chunk of us left the tour a bit early to sit in the car and get the air-conditioning ready and to escape the allergy hell.

Our next stop was another wine-tasting at Winery à Arsac.

For a bit of background, during this trip we have had some water fights. Sometimes when we drove by each other slowly, someone would throw water on the other car. Mostly at Monsieur Blayac's car. On our way to the next tasting, team Stéphane got Monsieur Blayac pretty good. We drove by and I rolled down my window to ask if "he was okay." Then I threw water on him and Chef made a run for it. HAHAHAHA. Chef got him pretty good one time earlier as well. And another time, Justin got Jessica pretty good in Chef Stéphane's car. (Yes, wholesome child-like fun).

When we pulled up into the parking lot next to Monsieur Blayac's car, no one would take their eyes off each other. Bottle in hand, ready to go. HAHAAH. I wouldn't even get out of the passenger side door just in case.

And here we are at the tasting. This was a special kind of tasting - they gave us different kinds of wines without telling us the type or appellation. We answered some questions in terms of wine preference. This was a wine test help categorize what kind s of wine suit us best. Was pretty neat. Poor chef wasn't feeling too well so he left the room for the entire tasting. hahahahahaah!

Their super-cool wine store. So Amanda told me later that Felipe brought in an empty coke can full of water. He was waiting for the right moment to dump it on my head. Thanks for the warning, Amanda!
Photobucket

Who knew? Ultra modern in the middle of nowhere.
Photobucket

Not looking so good there, Chef Séb... Chef Stéphane couldn't stop giggling about it the entire day. TEQUILA !

I bet being surrounded by all those wine bottles alone is enough to want to vomit.

Mon Signe Oenologique:

Who knew? Most of it actually sounds like the opposite of what I typically like. But maybe they got the fashion aspect right? Hah, regardless, it was fun. The pamphlet they gave me with my signe Oenologique had a list of wines that might interest me. I thought that was pretty cool. Will check them out when I can.

Sadly, this was the last of our activities on this fun and exhausting trip. After our tasting, we rushed to the train station.

Hung-over chef driving with his eyes closed (jk).
Photobucket

Photobucket

We made it in time. (Darn, I was hoping that the strike on the TGV would have been bad and we would have to stay in Bordeaux an extra day)
Photobucket

Photobucket

I managed to stay awake this entire day even though I was hungover and had the least amount of sleep. Later on during the train ride, I totally passed out. By the time we got to Paris, it was around 23h45.

I had so much fun on this trip. I am going to miss my classmates and my chef so much. This is probably the last time we would be together as a group. All I gotta say is that I am so glad I picked Ferrandi. Overall one of the best and most fun, influential, and educational experiences of my life. I definitely learned the meaning of hard labor. I will never ever ever regret my decision of dropping the old corporate IT lifestyle for this.

C'est vraiment fini !

Almost... I volunteered to help Chef Stéphane with a cooking demo tomorrow. I am not ready to be done with school yet!

Château Lynch-Bages, Château Cordeillan-Bages, et Restaurant L'Arberet

730AM Recontrer. Tired. Very tired. Last night I couldn't sleep because my roomie wouldn't stop snoring. So I texted Bang-me in the middle of the night to see if I could crash at her place. That only left me with about 2 hours of sleep. And I was hungover. So was Chris and Chef. Good times in Bordeaux. =D

Photobucket

Our first stop was to - SURPRISE!- another wine tasting at Château Lynch-Bages. At 9AM.

I was nauseous all morning, but conveniently, I started to feel better by the time we got to the tasting part of the tour. But I ended up tasting and spitting the wine. I think most people were spitting this morning. Amanda overheard chef saying "what a shame." And Chris was pretty nauseous too. I gave him a couple Pepto which he took with WINE. HAHAHAHAHAHA. Really, there was nothing else to drink.

After, we did a bit of shopping.

Photobucket

I bought a couple bottles for the Donnays. It's too bad I have to ship it from Paris when I was already in Bordeaux. They don't ship wine here... isn't that supposed to be standard at most wineries? Tant pis.
Photobucket

Our next stop was Cordeillan-Bages where Chef Thierry Marx's restaurant is. I was originally supposed to do my next stage there, but Brian ended up going. This trip was super special for him.
Photobucket

Chef/MOF Jean-Luc Rocha took us on a tour.

Afterwards, he took us on a tour of the Thierry Marx cooking school which is located in a nearby brasserie.

And here is a random photo of Chris trying on my jacket at the brasserie. Sexy, ain't it?
Photobucket

And then lunchtime at Restaurant L'Arberet. On our way to the restaurant, we took a quick pause at the beach. How f'in gorgeous.
Photobucket

Photobucket

And our meal at L'Aberet - a small family-owned restaurant. They also had a few rooms for lodging. The place really reminded me of Costa Rica. They had a bunch of parrots and animals in the backyard of the restaurant. The decor reminded me of it too.

Amuse bouche - tuna. Ummm.

Photobucket

So funny story - we heard an uproar of laughter from the other table during lunch. Apparently, last night, Chef Stéphane took a photo of Chef Séb passed out on the bed, shirtless, and obviously drunk. He passed his camera around the table and told everyone to hurry and look it at. Chef Sébastien quickly grabbed the camera and deleted the photo. DAMN! Would have been a great photo for this blog. Or Facebook ! AHHAHAHA. (Ok, I am not that mean. C'est pour rire =D)

Outside the restaurant. Here is everyone that was riding in Monsieur Blayac's car.
Photobucket

Everyone jumped out of the car because Ido ripped a bad one. And it really was that bad. I just walked by and could smell it. It was hilarious though.

Day is not over!

Ferme au esturgeon + Maison du Fleuve + Tequila

After our trip to Dune du Pyla, we went to a sturgeon farm.
Photobucket

This farm produces 30% of caviar in France. I also learned that it takes 7 years for a sturgeon to reproduce eggs hence the reason why they are so expensive. And they die from stress. Apparently in the past, some visitors that came were too loud so 70% of the sturgeons died from. Crazy huh?

Exemple (we didn't do it!)
Photobucket

There is something like 50 kilos of sturgeon per one square meter.
Photobucket

Photobucket

Photobucket

After the farm, we went visit Chef Nicolas Magie at his restaurant. He wasn't there the night we ate because he was really exhausted from traveling and working. We stopped by for an aperitif and to say hello.
Photobucket

Photobucket

We got to see his kitchen and "backyard."

Then it was off on another boat ride and l'apéro.
Photobucket

Chef Stéphane's children came. Tom, Chef Stéphane, and Margaux (after the winery in Bordeaux). They are the coolest kids EVER! His daughter speaks really good English - probably better than my French! And she is just learning from school.

So in the middle of dinner, we were chatting a bit with Stéphane's kids. (Super friendly and well-behaved). Eldar wanted to know how old they were. The proper way to ask is "Quel âge as-tu?"

After a few glasses of wine, Eldar ended up saying,

"Quel étage ?"

HAHAHAHAHHAHAHAHA. That means, Which floor? It was soooo funny. The kids, Chef, the whole table just burst out laughing. The kids were like,

"Ce n'est pas 'quel étage'." C'est 'quel âge'!"

HAHAHAAHHAHA. Oh Eldar, the things that come out of your mouth. Always entertaining.

After dinner, we took a nice boat-ride back. How romantic!
Photobucket

Me, Alex, and Andrew were hanging out with Tom. We were teaching him English slang - it was so funny. We taught him 'what up, dawg!' 'HOLLA' and 'Chillen.' Then we told him to say that to his dad and Chef Sébastien. HAHAHAHAHA We also taught him 'what up shorty!' and directed him to say it to Felipe. Twice. HAHAHAHAHA. Sorry, Felipe, it was hilarious.
Photobucket

Photobucket

When we got to land, we decided to begin our night at a bar.

Les Grands Chefs - Cropped to make it PG. Is that perma-grin I see, Chef Sébastien?

Blue steel baby!
Photobucket

I'm just a bit tipsy... I think everyone was... and some more than others HAHAH!
Photobucket

Shots were cheap so me, Chris, and Felipe bought a few rounds of tequila (aka Te-Kill-Ya) for everyone.
Photobucket

And of course, that included chef...
Photobucket

And Eldar (He's totally messing around btw, that is salt in his hands.)

So some background info. Felipe is always talking about Brazil so Eldar always makes fun of him saying "In Bra-zeeellll..." That is where the "In Bordeaux ! ..." comes from. And Bordel means a big f'in mess in French. We hear it all the time in the kitchen from the Chefs. Especially, Chef Stéphane.

I had three glasses of wine at dinner (which is a lot for me). Plus we had been drinking all day pretty much. And I had a drink at the bar. If I had taken that shot, I think I would have been a wee bit sick - and I would probably start being everyone's best friend.

The night ended early around 3am. We wanted to go to a club but it was totally dead. Too bad! We went back to the hotel and let's just say someone was quite "burer" and needed some help figuring out how to use his key card to open the door...

What a really great last night in Bordeaux. I love school.
