Decided to go to the edge of Paris today to try what was voted to be the best croissant in Paris in 2007.
I went a bit late - around 12h00 so wasn't as fresh as it could have been. Surprisingly, it was not flaky at all. Very dense, and a bit chewy. The taste was definitely there, but not the texture. I also tried a pepite au chocolat. Just like the croissant, it had the flavor but not the texture.
I would have to say "no" on the best croissant in Paris, as I have had better from random boulangerie's in the 18th. Tant pis.
